摘要
麸质在人类白细胞抗原DQ2 / DQ8 +的遗传易感人群中引发乳糜泻(CD)和I型糖尿病,并与精神分裂症和自闭症等疾病相关。严格的无麸质饮食是对CD患者唯一有效的治疗方法,而对腹腔I型糖尿病患者的治疗方法可能取决于饮食的时机和频率。 CD患者使用无麸质饮食可能会导致代谢综合征和非酒精性脂肪肝疾病的发展,并可能导致高血糖指数,低纤维饮食和微量营养素缺乏症。铜生物利用度的改变(缺乏,过量或异常的配伍)可能有助于相关病理的发生和进展。因此,无麸质饮食患者的营养摄入应该成为未来研究的重点。其他以面筋为基础的疗法引起了人们的兴趣,例如面筋的酶促预处理,消化膳食面筋的口服酶补充剂,通过降低或删除面筋毒性的小麦品种去除面筋,开发聚合物粘合剂以抑制面筋诱导的病理。
