摘要

香料不仅是烹饪中用于改善菜肴口感的草药,而且还是多种有益于健康的生物活性化合物的来源。 由于其抗菌,消炎和致癌特性,自古以来就已使用它们。 几项科学研究表明它们对慢性病具有保护作用。 实际上,它们的活性化合物可能有助于关节炎,神经退行性疾病(阿尔茨海默氏症,帕金森氏症,亨廷顿氏病,肌萎缩性侧索硬化症等),糖尿病,肌肉酸痛,胃肠道疾病等。 在本研究中,已综述了香料及其有效成分在慢性疾病(癌症,关节炎,心血管疾病等)中的可能作用及其作用机理。
