摘要
心血管疾病是世界上最主要的死亡原因。动脉粥样硬化的特征是动脉壁的氧化脂质沉积和炎症,是公共卫生和医学的一个重要问题。一些饮食香料在许多国家被广泛使用;然而,它们在动脉粥样硬化预防和治疗中的作用机制仍不清楚。本文就各种用于预防和治疗动脉粥样硬化的香料活性成分的性质及其相关的动脉粥样硬化危险因素进行综述。我们总结了与动脉粥样硬化相关的香料的作用机制、流行病学分析和临床、动物模型和细胞系中使用的各种成分的研究。最值得注意的是,我们重点研究了这些香料衍生化合物引起其降脂、抗炎、抗氧化和免疫调节特性的作用机制,以及它们参与选定的生化和信号转导途径。建议未来的研究应着眼于设计良好的临床对照试验,更深入地研究香料及其活性成分在预防/治疗动脉粥样硬化中的作用。基于这篇文献综述,香料及其活性成分耐受性好,副作用少,因此为动脉粥样硬化患者提供了一种有前景的辅助治疗策略。
